Simple Coconut Rice

This is the simplest rice dish I love to make when I am in a hurry to fix something for lunch or when I am bored to cook. Usually our Saturday's lunch plate will be filled with this yummy coconut rice and a veggi curry or brinjal salna. That's the usual combo which my hubby loves.

Here comes this recipe of Coconut rice for you to enjoy.

Things needed
Basmathi rice - 2 Cups
Coconut milk - 2 Cups
Onion - 1 Large chopped
Water - 1 Cup
Green chillies - 3 no.
Garlic - 6 whole pearls
Ginger garlic paste - 1tbsp
Cashew nuts
Bay leaf - 2 no.
Cardamon - 2 no.
Cloves - 5 nos.
Cinnamon - 1 stick
Coriander - 1/2 Cup chopped
Mint - 1/2 Cup chopped
Salt - to taste
Oil - 1tbsp
Butter - 1tbsp

Soak the rice for about 30 minutes. Heat oil in a pressure cooker. Then add the cloves, cardamon, cinnamon stick, bay leaf, cashew nuts, garlic pearls and green chillies. Saute them for 2minutes, then add the chopped onions and cook it until it turns pink. Add ginger garlic paste and cook for 2 minutes. Drain water from the soaked up rice and add it to masala in the cooker. Fry the rice with the masala for few minutes. Now add the coconut milk and water to the rice mixture. Add salt and adjust to your taste.
Bring this mixture to boil and top it with butter. Close the cooker and turn the heat to low. Pressure cook for 10 minutes. Turn off the stove and let the cooker stand on the same heat for 20 minutes. After 30 minutes of cooking, your plate will be stuffed with yummy coconut rice and the entire kitchen will be filled with nice aroma of the coconut milk.
