Broccoli Multi-Dal Kuzhipaniyaram

>> Tuesday, June 8, 2010

Left over dosa batter, always turns out to be a simple and yummy dish for the snack time. In that row, comes the  Broccoli Multi-Dal kuzhipaniyarams, made from left over Broccoli Multi-Dal Dosa batter.

Things needed
Broccoli Multi-Dal dosa batter - 1 Cup
Onion - medium size 1 no. (Chopped)
Coconut - 1 tbsp (Grated)
Red chilly - 2 nos.
Jeera/Jeeragam - 1 tsp
Mustard/ Kadugu - 1 tsp
Asafoetida/ Perungayam powder - 1/2 tsp
Coriander/ Kothamalli - 1 tbsp (Chopped)
Ginger - 1 small piece (Finely chopped)
Oil - 1 tsp
Heat oil in a pan, add mustard seeds and let it splatter. Then add jeera, red chilly, asafoetida, ginger, coconut, onions and fry for 2 minutes. Add this mixture to the dosa batter and mix well.
Now heat the kuzhipaniyaram pan  and grease it with oil. Pour the batter into the mould. Let it cook for 5 minutes on medium flame, then flip it using a chop stick. Let it cook on other side for another 5 minutes.
Tasty, healthy paniyarams are ready to served hot. We enjoyed it as evening snack with tangy coriander peanut chutney.
I used very little oil, hence the paniyarams were soft. If you wanna make them crispier, cook them with liberal amount of oil. :)
