Mango Carrot Badam Halwa

Today I had a chance to know about the Sizziling Summer Contest, when I was browsing. In an idea to join the event, I searched my kitchen and found having few mangoes. I didn't want to make the usual mango shake or the mango juice.. Thinking what can be done.. May be some sweet using mango.. How about mango kesari.. Nooo.. Mango burfi.. Its still a no.. Then came the idea of mango badam halwa..

While thinking, there came a new idea from my hubby, he told why not let's make the mango carrot badam halwa. And we ended up with the so called Mango Carrot badam halwa.. Sweet and drenched in ghee.. The halwa was really yummy and had its natural lemon yellow color got from carrot and the mango.

Going on to the recipe..

Things needed
Mango - 1 no.
Carrot - 2 nos. medium sized
Almonds/ Badam - 1 Cup
Low fat milk - 2 Cups
Sugar - 1 Cup
Elachi powder - 1 tsp
Raisins, Cashew nuts - For garnishing
Saffron - Few strands
Ghee - 2 tbsp
Peel the carrot and grate them finely. Soak almonds in warm water for 15 minutes. Then peel its skin and make a thick paste with milk. Also blend the mango in the blender and make it into a thick puree.
Heat 1tsp of ghee in a non-stick pan. Add the raisins, cashews and fry till they turn into light golden brown. Add the grated carrot and milk to the pan. To this add the sugar and cook for about 15 minutes.
Then add the mango puree and almond paste. Turn the flame to low and let the mixture cook. It will take about 30 minutes for the mixture to get cooked and reach the halwa consistency. From this stage on, the halwa needs to checked on often.
Now add the ghee, elaichi powder, saffron and keep stirring the mixture. Within few minutes, we can notice the ghee leaving the mixture and the mixture comes together as a soft ball. At this stage the mixture turns into halwa.
Its ready to be served warm or cold. It was great to enjoy a cup of halwa watching TV that too on a long weekend.. :)
