Spanish Almond Cake - Bizcocho De Almendras

This is one of the common dessert in Spanish cuisine which is simple and easy to bake. Its popularly known as Bizcocho De Almendras. This is my first cake recipe and it turned out to be really soft and delicious. My hubby was really surprised with the cake and he himself finished off with most of it.. :) Of course I was really happy about it..

This cake is very simple to bake even for a new bakers like me. It needs no stirring, no-cut and fold neither we got to separate the white and yolk. Yeah it was so easy to make.. Mix in all the ingredients and bake it at the right temperature yummy light almond cake is ready to be enjoyed. I have followed the recipe I got from Chowtimes.com except for I have added some almond extract to enhance the flavor of the cake further.

Also I have used the homemade ground almond. I ground the almonds in the blender into a medium coarse powder. Grinding the almonds finer may result in a oily sticky powder. So make sure to grind the almond into a bit coarser powder.

Things needed
All purpose flour - 3/4 Cup
Milk - 1/2 Cup (At room temperature)
Canola oil - 1/3 Cup
Eggs - 2 nos. ( At room temperature)
Sugar - 1 Cup
Ground almond - 1/4 Cup ( I have used home made almond powder)
Baking powder - 3/4 Tsp
Almond essence - 1/2 Tsp ( Optional)
Chopped almonds - 2 Tbsp

Pre-heat the oven to 350 F. Grease the cake pan ( I used 8' by 1 1/2' round cake pan) with oil and dust it with flour.

Beat the eggs into a large mixing bowl. To this add the sugar and mix it well. Then add the oil, flour, ground almond, baking powder, almond extract, milk and mix well without any lumps.
Pour the batter into the greased pan and sprinkle the chopped almonds on the top.

Bake in the pre-heated oven for 25 minutes or until the tooth pick inserted into the cake comes out clean.
Simple soft rich almond cake is ready to be enjoyed either with your coffee or with the ice cream of our choice. The cake stays fresh and tasty for up to 3 days. This cake goes the AWED Spain event hosted by Priya, event by DK and to Champa's Bake off event
