Spinach Sweet corn Kootu

This is a simple kootu that goes well with rice or chapathi. The combo of corn with spinach makes the kootu to taste great with the mild sweetness from the corn kernels. I have used kadalai paruppu or bengal gram for the kootu. This recipe can also be tried with other varities of dals like moong dal or toor dal.


Things needed
Spinach - 1 Cup ( Chopped)
Corn kernel - 1 Cup
Kadalai paruppu/ Split yellow peas - 1/2 Cup
Jeera/ Cumin seeds - 1 Tsp
Mustard seeds/ Kadugu - 1 Tsp
Oil - 1 Tsp
Salt - To taste

To grind
Coconut - 1/4 Cup ( Grated)
Cumin seeds - 1 Tsp
Green chilly - 2 nos.
Coriander seeds - 1/2 Tsp
Udaitha kadalai/ Roasted chickpeas/ Pottu kadalai - 1 Tbsp

Soak the bengal gram in warm water for 30 minutes. Pressure cook it for 2 whistles and make sure the dal does not turn mushy.

Heat oil in a pan, add cumin seeds, mustard seeds and let it sizzle. Add chopped spinach, sweet corn and cook closed for 10 minutes with required amount of salt.

Meanwhile grind all the ingredients listed under 'To grind' into a fine paste. Add the ground paste and cooked dal to the spinach corn mixture and cook closed for another10 minutes.
