Simple Sundal

Thinking what to make for evening snack, I found some left over frozen peas, corn, black eye peas, carrots. I then decided to grab them all into a healthy delicious sundal. Sundal is one of the easiest and healthy snack that will make our evening tea time great.

Things needed
Black eye peas - 1/2 Cup
Corn - 1/4 Cup
Green peas - 1/4 Cup
Carrots - 1/8 cup ( Chopped)
Salt - To taste
Oil - 1 Tsp
Cumin seeds/ Jeera - 1/2 Tsp
Mustard seeds/ Kadugu - 1/2 Tsp
Dry red chilly - 2 nos.
Grated coconut - 1/8 Cup
Sambar powder - 1 Tsp

Boil black eye peas, green peas, corn , carrot with salt until done and letting it not to turn mushy. Heat oil in a pan, add mustard seeds, cumin seeds, red chilly, sambar powder, coconut and wait for the seeds to crackle. Add the boiled mixed peas and adjust for salt. Yummy, healthy and colorful sundal is ready to be enjoyed.
