Pineapple Raisin Egg Fried rice

This is a simple fried rice recipe with slight twist from the usual egg fried rice. I got this idea from the Thai pineapple rice and modified the recipe to suite our taste. Add pineapples and raisins to the rice really enhanced the flavors, also the mild sweetness from pineapples and chewy raisins in each bite made the fried rice great.

Things needed
Rice - 1 Cup
Mixed vegetables( Beans, Cabbage, Carrot, Peas) - 1/4 Cup (Finely chopped)
Eggs - 3 nos.
Pineapple - 1/4 Cup ( Chopped)
Raisins - 1 TbspSoy sauce - 2 Tbsp
Black pepper powder - 1 TspGreen chilly - 3 nos. ( Finely chopped)
Garlic pearls - 3nos. ( Finely chopped) Salt - to taste
Oil - 1 tbsp
Spring onions - 1/4 Cup (Chopped)

First cook rice by adding salt and 1tsp of oil to the boiling water. Adding oil will prevent rice from sticking to each other. While cooking the rice make sure that its not cooked completely. Just cook it to 80%, since rice texture should be crunchier for fried rice and not soft. Transfer the cooked rice to a large plate and let it cool.

Now heat 1/2 tbsp of oil in a pan, add garlic and vegetables to it. Fry the veggies on high flame by adding salt and 1 tsp of soy sauce. Frying should be done on very high flame, so as to get the light smoky flavor like fast food fried rice. Cook the vegetables, still maintaining their crunchiness and color. Transfer the vegetables to a plate.



In the same pan add, eggs, salt and pepper and prepare scrambled eggs. Now heat the remaining oil in a pan, add cooked rice to it. Fry the rice on high flame by adding 1tsp of soy sauce, green chillies and salt. Then add the cooked vegetable, scrambled eggs, pineapple and raisins to it. Fry the mixture for 2 minutes and adjust for salt and pepper at this point. Add chopped spring onions and turn off the heat.
Spicy pineapple raisin egg fried rice is ready to be served. The spiciness from the green chillies is compensated by the sweetness from raisins and the tanginess from pineapples. This fried rice goes to Yasmeen's Tropical Temptations
