Carrot Macaroni Kheer

Here comes a simple and delicious dessert that will be ready in few minutes and with the simple ingredients available. I was having a pack of baby carrots that needs to be used sooner. So thought of making some carrot kheer. Just for a change tried adding few boiled macaroni to it and turned out to be great. My 18 month old son loves macaroni. That too macaroni in a sweet.. he just loved it and enjoyed eating it by himself... :)

Things needed
Carrot - 1 Cup ( Finely grated)
Evaporated milk - 1/2 Cup
Macaroni - 1/8 Cup
Milk - 1 Cup
Sugar - 1/2 Cup
Cardamon powder - 1/2 Tsp
Almonds - 1 Tbsp ( Roughly chopped)
Pistachios - For garnishing
First boil macaroni until 1/2 cooked. Drain them and roughly chop them into smaller pieces. Heat evaporated milk, milk, sugar, grated carrot in a pan. Let the mixture boil on a medium flame for about 10 minutes or until the raw flavor of carrot leaves the milk mixture. Now add the cooked macaroni, almonds, cardamon powder and let the mixture cook for another 10 minutes. If the mixture tends to get little thicker add in extra milk. We usually like our kheer bit thicker. Finally adjust for sugar, garnish with chopped pistachios and turn off the heat.
Yummy kheer is ready to be enjoyed hot or cold. Bright color from the carrots, together with the chunky macaroni and almonds in each bite makes the kheer delicious. This rich kheer goes to the following events.

Macroni with kheer is completely new to me, looks very yummy. Your decoration also looks very cute.
