Crispy Murukku

>> Monday, November 15, 2010

This is another snack I made during Diwali. Was unable to post the recipe then. This is a very simple, crispy snack that can be made in just few minutes even in large batches. With little butter added to it, these yummy murukku will melt in mouth and will a great snack for coffee. This recipe can also be made with store brought rice flour.

Things needed
Raw rice flour/ Pachai arisi maavu - 1 Cup
Urad dal flour/ Ulutham paruppu maavu - 1 Tbsp
Jeera/ Cumin seeds - 1 Tbsp
Hing/ Perungayam - 1/4 Tsp
Sesame seeds - 1 Tsp ( I used white seeds)
Salt - To taste
Butter - 1 Tbsp
Water - To make a stiff, smooth dough

Combine all the above ingredients with required water into a smooth, stiff dough. Divide the dough into 3 balls. Place the dough balls into the murukku achhu/ Murukku mould with star shaped plate.

Heat oil in a pan and let it stay on high flame. Drop a small amount of dough into the oil for testing. When the dough bubbles up immediately when dropped, oil is ready for frying. Press the murukku directly into oil and fry it until crispy and make sure not to let the murukku turn into brown color. Frying the murukku on a high flame just for a couple of minutes will make crispy, light colored murukku.
Crispy, light murukku are ready to be enjoyed. This goes to Lavi's Diwali Sweets and snacks event
