Kothavarangai Poriyal/ Long beans stir fry

Another simple and yummy poriyal, great to be enjoyed with sambar, rasam or curd. For non-vegetarian version we can even try adding prawns or eggs.


Things needed
Long beans/Kothavaranga - 2 Cups ( Cleaned and chopped) 

Onion - 1 no. medium sized ( Finely chopped)
Tomato - 1 no. small sized ( Finely chopped)Garlic ginger paste - 1 Tsp
Dry red chilly - 1 no.
Mustard seeds - 1/2 Tsp
Jeera/ Cumin seeds - 1 Tsp
Chilly powder - 1/2 Tsp
Tumeric powder - a pinch

Salt - To taste
Oil - 1 Tsp
Coriander leaves/ Cilantro - For garnishing


Boil the long beans until 3/4 done or pressure cook for just 2 whistles. Heat oil in a pan.  Add mustard, cumin seeds, red chilly, tumeric, ginger garlic paste and fry until the raw flavor of garlic vanishes. Add cooked long  beans, salt, chilly powder and cook covered for 15 minutes. Finish off with coriander leaves. Simple and quick poriyal is ready to be enjoyed.
