Banana Oats Walnut Bread

This is a simple and healthy quick bread I made few days back. I also shared it with few of my friends and happy to know that they enjoyed it. Its very easy to make and makes a perfect bread for breakfast or even with  evening coffee. Oats added to it makes it really healthy and also gives a mild chewiness to the usual moist banana bread. I have added walnut, raisins and pecan to my bread. They can be substituted with any kind of nuts or dried fruits.

Things needed
All purpose flour - 1 1/4 Cups
Oats - 3/4 Cup
Baking powder - 1 Tbsp
Sugar - 1/2 Cup
Salt - 1/2 Tsp
Walnuts - 1/4 Cup ( Roughly chopped)
Raisins - 1/4 Cup ( Soaked in hot water for 10minutes and dried)
Mashed banana - 1 Cup
Yogurt - 1/4 Cup ( I used plain low fat yogurt)
Eggs - 2 large
Oil - 1/3 Cup ( I used canola oil. Can used melted butter for rich, moist bread)
Vanilla essence - 1 Tsp
Pecans - 1/8 Cup ( Finely chopped for topping)(Optional)

Sieve flour with baking soda, salt in a bowl. To this add oats, walnut and raisins. Mix in bananas, yogurt, eggs, oil and vanilla into a separate bowl until well combined. Add the wet ingredients to dry mixture and mix with wooden spoon until just combined and there is no streaks of flour. Transfer the contents to a greased loaf pan and top the bread batter with chopped pecans if desired. Bake for 45 minutes or until a tooth pick inserted comes out clean.
Let the bread cool for at least 1 hour and slice. Moist, healthy and yummy bread is ready to be enjoyed with honey or Nutella. The bread also tastes great by itself with no toppings.
This can also be made into individual muffins. This recipe will yield around 12 medium sized muffins. This goes to Helen's Breakfast Club # 9
