Lima Beans and Spinach Pakoda Curry

This is a simple and yummy including lot of nutritive values from spinach and legumes added to it. I tried this curry when I had some left over masala vadai/ bengal gram dal fritters batter. I tossed in some chopped spinach into the vadai batter  and it turned into yummy pakodas. Later on added these crispy pakodas with the Lima beans curry and the combo tasted great. I made it like a dry curry. We can also make it with gravy to go with rice. This may sound something similar to vada curry with lot more veggies added to it..

Spinach and Peas Pasta

This is one of my kids favorite dish, into which I can sneak in a lot of spinach and peas. We can also try adding any kind of veggies to this pasta dish and it will taste great. With little bit of cheese added to it, it tasted great and my kid enjoyed it for his dinner.

Tofu Spinach Cutlet

Now a days cooking has to been based on what my picky 20 month old son will eat. So came this recipe of tofu spinach cutlet. I know he will like tofu, so just wanted to pack lot more nutrition to it I add spinach and made it into a yummy cutlet which he really liked. I just shallow fried these cutlets with some bread crumbs on them. For lot more richness, the cutlets can be deep fried.

Chickpeas and Spinach Stew

This is a simple and light curry or stew made with chickpeas and spinach. This stew could be made in just few minutes if we have cooked up chickpeas or canned garbanzo beans ready in hand. I had some left over rice cooked for yesterday's dinner. Didn't want to waste it and also I was not in a mood for long cooking hours. So thought of adding few veggies and some flavor to the left over rice and made it into a delicious colorful variety rice for our lunch. A plate of colorful variety rice will always be perfect with some raita, chips or appalam. I didn't want to make the usual lemon rice or puliyodharae. So just modified the usual stuff to add extra flavors and so came our lunch plate with Carrot lemon rice, spinach Lima bean rice, coconut rice. It was a perfect combo of tangy-spicy-rich rice dishes.

Spinach Capsicum stir fry/ Keerai Capsicum poriyal

This is a simple and healthy side dish that could be made in a jiffy. It goes well with sambar rice, kuzhambu sadam or even curd rice. It also serves as a great rice by itself. Mix the poriyal with rice and add a spoon of ghee and serve with pappad... It will taste great and quiet nutritious too. The flavors from capsicum and garlic together makes the spinach to taste great.

Spinach Sweet corn Kootu

This is a simple kootu that goes well with rice or chapathi. The combo of corn with spinach makes the kootu to taste great with the mild sweetness from the corn kernels. I have used kadalai paruppu or bengal gram for the kootu. This recipe can also be tried with other varities of dals like moong dal or toor dal.

Saturday night, really bored to fix my dinner. There came my hubby asking for chapathi and some vegetable curry. I rushed to the kitchen to check for frozen chapathis.. the pack was empty.. :(

I had to make the chapathi myself now, I was really lazy to make the dough and roll it to get rotis. Then came the solution, my hubby said, 'lemme me make our dinner'. With a broad smile in my face, I said 'Ofcourse dear'.. ;)

I made some whole moong bean sprouts salad, for evening snack. My mom always used to make this sprouts salad for our snack, which we call mulai kattina pachai payiru in Tamil. This simple salad with a touch of lime juice will be a great refreshment in the evenings, when back from college.

Broccoli Spinach Kadalai paruppu Kootu

I usually like to combine two or more veggies and make a combo dish out of them, so that it saves our time of cooking two separate dishes, still leaving us with the same nutrient values and taste of those vegetables. In that order, I came up with the broccoli spinach kadalai paruppu kootu.
