Spinach Capsicum stir fry/ Keerai Capsicum poriyal

This is a simple and healthy side dish that could be made in a jiffy. It goes well with sambar rice, kuzhambu sadam or even curd rice. It also serves as a great rice by itself. Mix the poriyal with rice and add a spoon of ghee and serve with pappad... It will taste great and quiet nutritious too. The flavors from capsicum and garlic together makes the spinach to taste great.
Things needed
Spinach - 1 Cup ( Cleaned and chopped) (I have used frozen spinach)
Capsicum - 1 no. medium sized ( Finely chopped)
Garlic pearls - 4 nos. ( Finely chopped)
Dry red chilly - 1 no.
Mustard seeds - 1/2 Tsp
Jeera/ Cumin seeds - 1 Tsp
Black pepper powder - 1/2 Tsp
Grated coconut - 1 Tbsp ( I used frozen coconut)
Salt - To taste
Oil - 1 Tsp
Heat oil in a pan. Add mustard, cumin seeds, red chilly and garlic and fry until the garlic pieces turn into light golden brown color. Add spinach, capsicum, salt, pepper powder and cook covered for 10 minutes. Finally add coconut and fry the mixture for couple of minutes. Simple, healthy spinach capsicum poriyal is ready to be enjoyed.
