Cucumber Mint Dosa

Are you in mood for a different dosa.. Thinking what to make for dinner without dosa batter.. Then here comes the easy yummy dosa that can be made in a jiffy. When ever I am out of my usual dosa/idli batter, I keep experimenting by combining all the dals to make a new dosa/adai. In that process, came my cucumber mint dosa which tasted really good and is a great fix for breakfast and dinner when we are short of regular dosa batter.
Things needed
Rice - 2 Cups
Urad dal/ Ulutham paruppu - 1/4 Cup
Moong dal/ Pachai paruppu - 1/4 Cup
Bengal gram dal/ Kadalai paruppu - 1/4 Cup
Toor dal/ Thuvaram paruppu - 1/4 Cup
Dry red chilly - 2 nos.
Rava/Sooji/Semolina - 1/4 Cup
Asafoetida/ Perungayam powder - 1 tsp
Cucumber- 1 no. (Chopped)
Mint - 1 Cup ( Chopped)Red chilly powder - 1 tsp
Salt - to taste
Soak all the above ingredients except cucumber,mint,chilly powder for about 2-3 hours. Then grind the ingredients with cucumber, mint, salt and chilly powder. The juice from cucumber will be sufficient enough to make a smooth paste. If needed a little amount of water could be added and ensure that the batter consistency is that of dosa batter.
We can make dosas, using this batter instantly or by letting it ferment overnight. In both cases, the dosa, turned out to be soft and tastier. This batter can be stored in refrigerator for about 3 days.
The mild flavor of cucumber combined with the appetizing flavors from mint leaves makes the dosa taste great. This dosa recipe goes to Susan's MLLA 26 event guest hosted by Simona

Very nice. I have made dosas only once and without fermentation: I need to try that option. I like the addition of mint leaves. Thanks for participating.
