Carrot Coconut Almond milk

The few left out carrots sitting in my fridge were tempting me to make some kheer out of it. Then I saw half can of coconut milk sitting next to it. So thought of finish both of them and came with this different kind of almond milk. I made this almond milk by using half coconut milk and half low fat milk. Carrots blended into this milk gives a new flavor to it and also the nice yellow color.

Here comes the carrot coconut almond milk.

Things needed
Carrot - 100gms
Coconut milk - 1/2 Cup
Low fat milk - 1/2 Cup
Almonds - 15nos.
Cardamon - 2nos.
Sugar - 1 Cup
Mixed nuts
Sweetened coconut flakes
Soak almonds in water and microwave it for about 5 minutes. Then peel the skin by blanching it with cold water. Add all the above ingredients to a blender and blend into a smoothie. Pour this mixture into a vessel and bring it to boil. Now turn the heat to low and let the mixture cook for 5 minutes.
Meanwhile dry toast the mixed nut and the sweetened coconut flakes. Turn off the heat and add the nuts to the milk. Carrot coconut almond milk is ready to be served chilled. Every sip of the rich milk will get you to bite the nuts and coconut flakes.
We enjoyed this cooling almond milk with our dinner.
