Badam Oats Khoya Laddu

>> Sunday, October 3, 2010

Here comes a yummy and new kind of laddu that I tried yesterday. I was having some leftover khoya I used for gulab jamuns sitting in my fridge. To finish it off, I was thinking of making some sweet. Then came the idea of this laddu. Just oats wouldn't give much flavor to the sweet, so decided to add almonds too. This combo of almonds, khoya and oats resulted in a really delicious laddu.
The laddu had its chewy texture from oats, richness form almonds and the strong flavors from khoya. Pinch of added cardamon brings in the traditional flavors into the laddu. With no ghee added and made from oats this sweet turns out to be healthy and also can be enjoyed without any guilty feeling.. :)

Things needed
Oats - 1/2 Cup
Khoya - 1/4 Cup
Almonds - 1/8 Cup
Sugar - 1/4 Cup
Cardamon powder - 1/4 Tsp
Milk - 2 Tbsp

Dry roast oats and almonds until they turn slightly golden brown in color. Let it cool and grind it into a coarse powder. Now place the khoya and sugar in a pan and cook until the sugar is completed dissolved into khoya. Add cardamon powder, ground oats-almond mixture to the pan and cook for just few minutes. Turn off the heat and let it cool.

Now make laddus from the cooled mixture by sprinkling little milk as needed. Let the laddu dry for about 30 minutes and then store them in a airtight container. Yummy, healthy and simple laddus are ready to be enjoyed. These will stay good for about 3 days at room temperature.
These laddus go to Celebrate sweets - Ladoo event started by Nivedita and guest hosted by Nithu and to Akila's Dish name starts with - B event
