Stir fried Okra and Sweet corn Salad

>> Thursday, September 30, 2010

This is a very simple and healthy salad that can be made in just few minutes. It's a great, light snack or the same can be converted into a yummy raita by adding some yogurt to it. I have the used the traditional seasonings for this salad to give it that Indian touch.

Things needed
Okra - 1/2 Cup
Sweet corn - 1/4 Cup
Dry red chilly - 1 no.
Pepper powder - 1 Tsp
Lime juice - 1 Tsp
Salt - To taste
Cumin seeds/Jeera - 1/4 Tsp
Oil - 1/4 Tsp
Chaat masala - To taste

Heat oil in a pan, add cumin seeds, dry chilly and let the seeds sizzle. Add okra and fry until they loose their stickiness and get 3/4th cooked. Add the boiled sweet corn to this and turn off the heat. Now finish the salad with pepper, salt, lime juice and chaat masala.
Light, crunchy and healthy salad is ready in few minutes. This goes to Veggie/Fruit a month - Okra event by Priya guest hosted by Kiran and to Only - Low oil/ Low Calorie event guest hosted by Priya, started by Pari
