Pineapple Kiwi Preserve

>> Sunday, September 26, 2010

We bought lot of fruits last weekend, as we went to the near by farmers market. We got some kiwis and pineapples too. But unfortunately the pineapple was not sweet enough. So I just combined the kiwis and pineapple to make a preserve. The preserve was really great and we enjoy it with bread or chapathi. Just with simple ingredients we could make delicious preserve at our home with the fresh fruits.

Things needed
Pineapple puree - 1 Cup
Kiwi - 1 Cup ( Finely chopped)
Sugar - 1/2 Cup
Cardamon powder - 1/4 Tsp
Lemon juice - 1 Tbsp

Heat pineapple puree, kiwi, sugar in a pan and cook the the mixture for about 20 minutes or until it starts to thicken. Add cardamon powder and lemon juice and cook the mixture for another 5 minutes. Yummy healthy pineapple kiwi preserve is ready to be enjoyed. The mild cardamon flavor gives that Indian touch to the preserve.
The tiny little seeds from kiwis blended into the bright yellow pineapple puree makes the jam look really attractive. This goes to Yasmeen's Tropical Temptations event.
