Being a Friday, that too with a long weekend ahead, my mind was all occupied about our 3 days trip to Vegas.. :) With no mood to cook, I was thinking to fix something simple and also wanted to finish off the left over vegetables in my fridge. I then grabbed the pack of mushrooms, cauliflower from my freezer and thought of making a pilaf with it. Suddenly something struck my mind and wanted to make it spicier, so came up with this Cauliflower Mushroom Jeera rice.

I usually like to combine two or more veggies and make a combo dish out of them, so that it saves our time of cooking two separate dishes, still leaving us with the same nutrient values and taste of those vegetables. In that order, I came up with the broccoli spinach kadalai paruppu kootu.

The few left out carrots sitting in my fridge were tempting me to make some kheer out of it. Then I saw half can of coconut milk sitting next to it. So thought of finish both of them and came with this different kind of almond milk. I made this almond milk by using half coconut milk and half low fat milk. Carrots blended into this milk gives a new flavor to it and also the nice yellow color.

This is the simplest rice dish I love to make when I am in a hurry to fix something for lunch or when I am bored to cook. Usually our Saturday's lunch plate will be filled with this yummy coconut rice and a veggi curry or brinjal salna. That's the usual combo which my hubby loves.

Here comes my first recipe. Being my first recipe for the blog, me thought of making a sweet dish, bit sentimental ;)

Thinking about sweets, Rasmalai came to my mind  first. That's because its my hubby's favourite sweet. When ever we go to India for vacation, he would make use of all the chance at any restaurant to try their rasmalai for dessert. So I decided to make this sweet for my first blog entry.

            Halo everybody.. I  am happy to join you all through this blog. Its still surprising how I ended up with a food blog, being a amateur cook by myself. Time changes everything.. Its two years since, I started cooking all myself by hearing to my mom's instructions and now I am good enough to suggest some new dishes to my mom herself. :)

           Here I come with my food world, where I can share some simple recipes tried by me, with more stress on food from Tamil Nadu. This blog will be of good help to beginners like me, to share effortless, uncomplicated recipes.

           Here I will also try to include some ideas on how to make our every day meal healthier. Being married to a health freak and a guy who is much tougher to satisfy, I had to learn to get the same authentic taste into our food, with fewer calories and fat.
