Banana Coconut Chocolate chip cookies (Eggless)
>> Tuesday, March 22, 2011
Here comes very simple and quick cookie recipe that I tried yesterday. It turned out to be really great. With just few ingredients and less fat, I was able to make soft and chewy cookies. Banana and chocolate flavors together made it a yummy combo and my kid enjoyed it for his snack.
Things needed
All purpose flour - 1/2 Cup
Cocoa powder - 1 Tbsp
Baking powder - 1/4 Tsp
Vegetable oil - 1/8 Cup
Mashed ripe Banana - 1/4 Cup
Brown sugar - 1/4 Cup
Milk - 1/8 Cup
Sweetened coconut flakes - 1/8 Cup
Chocolate/ Butterscotch chips - 1/8 Cup
Pre-heat the oven to 350 F. Sieve flour, cocoa powder and baking soda into a bowl. In a separate bowl mix in oil, mashed bananas, milk and sugar. Add the wet ingredients to dry ingredients and mix together with a wooden spoon until everything is just combined. Finally add in the chocolate chips and coconut flakes. Now scoop the batter on to a greased baking sheet to form equal sized cookies. Make sure there is enough space between the cookies, to help them expand on baking. Bake for 10 minutes or until the cookies turn golden brown.
Soft, chewy cookies are ready to be enjoyed. The cookie can also be made by replacing chocolate chips and coconut flakes with nuts or any dried fruit of our choice.
