Oats Almond White Chocolate Chip Cookies

Now a days, I am getting more interested to bake something or the other everyday. So came these cookies, which were really rich with buttery and nutty flavors from almonds. These were soft cookies and my hubby like the taste of it not these textures. Its because he likes just crispier and chewy cookies.
Things needed
Butter - 1/2 Cup or 1 stick (Room temperature)
Sugar - 1/2 Cup
Brown sugar - 1/4 Cup (Firmly packed)
Egg - 1
Vanilla extract - 1/2 Tsp
Quick cooking oats - 1 + 1/4 Cups
All purpose flour - 1 Cup
Baking powder - 1/2 Tsp
Baking soda - 1/2 Tsp
Salt - 1/4 Tsp
White chocolate chips - 1 Cup
Whole almond - 3/4 Cup ( Roughly chopped)
Pre-heat the oven to 350F. First grind oats into a fine powder. Add flour, salt, baking soda, baking powder to the ground oats and stir in the dry ingredients together. Beat butter with sugar, brown sugar until light and fluffy. Then add egg, vanilla essence and beat for couple of minutes. Add the dry ingredients mixture to the butter mix and beat on low speed until just mixed. Make sure not to over mix it. Finally add in the chocolate chips, chopped almonds into the mixture.
Scoop 2 Tbsp of cookie mixture into foiled cookie sheet with atleast 3inches space between each cookie. Bake the cookies for 10-15 minutes or until golden brown and crunchy. Yummy almond rich cookies are ready to be enjoyed.
