Broccoli Multi-Dal Dosa
>> Monday, June 7, 2010
Why always eat the traditional style rice flour dosa?? Why not try some dosa batter, that needs no fermentation and also needs less soaking time of the ingredients?? There I came up with this Multi-Dal dosa recipe. Thought of making it healthier and added my husband's favorite veggie, Broccoli to it. To my surprise the dosas were really delicious, and now this will be my quick fix for dosa, when I run out of usual dosa batter.
There quantity of dals and the variety of dals used for this batter are just as per my needs. The amount of each dal used can be varied to get slight variation in taste. And now to the recipe..
Things needed
Rice - 2 Cups
Urad dal/ Ulutham paruppu - 1/4 Cup
Moong dal/ Pachai paruppu - 1/4 Cup
Bengal gram dal/ Kadalai paruppu - 1/4 Cup
Toor dal/ Thuvaram paruppu - 1/4 Cup
Dry red chilly - 2 nos.
Rava/Sooji/Semolina - 1/4 Cup
Asafoetida/ Perungayam powder - 1 tsp
Frozen broccoli - 1 Pac (Chopped)
Red chilly powder - 1 tsp
Salt - to taste
Soak all the above ingredients except broccoli and chilly powder, for about 2-3 hours. Then grind with required amount of water into a smooth paste. Ensure that the batter consistency is that of dosa batter.
Separately grind broccoli with red chilly powder and salt into a rough paste.
Add this to the dosa batter, and Broccoli Multi-Dal dosa batter is ready.
We can make dosas, using this batter instantly or by letting it ferment overnight. In both cases, the dosa, turned out to be soft and tastier. This batter can be stored in refrigerator for about 1 week.
The dosa, can be made in the usual style and healthy Broccoli Multi-Dals dosas are ready to be served hot with chutney or sambar.
Healthy eating..
